This vibrant blue tea is made with 100% Butterfly Pea Flowers. This flower changes from a vibrant bright blue to purple and then pink with the addition of acid (think a dash of lemon or lime juice). It's used to make the Thai 'welcome drink' Nam Dok Anchun - just add a teaspoon of honey and a splash of lemon juice. The tea bags can be infused with a white liquor of your choice to create magical colour changing cocktails, or the tea frozen into ice-cubes to be used for the same effect.
