Valrhona refer to their Couverture chocolates as "Fèves". Fèves is French for "Bean" and refers to the shape of the 'chocolate drop'.
Dulcey is a caramelized white chocolate (or a 'Blonde Chocolate') that was like many good things in life, originally created by mistake. So the legend says, Frédéric Bau (Head Patissier at Valrhona) left some white chocolate in his bain-marie and was incredibly surprised by the result - the white chocolate had turned blonde and gave aromas of shortbread and caramelised milk. Within 8 years of this fateful mistake, Valrhona created the Dulcey blend - a subtly salty, biscuity chocolate with deep notes of caramelised milk, crisp shortbread and velvety milk chocolate.
