Tasmania’s floral emblem is the Blue Gum.  These majestic trees flower infrequently so the honey made from their nectar is indeed rare.   

Although quite light and creamy, Blue Gum honey has a rich flavour - with hints of caramel and mint.  It is perfect addition to bread - try a honey loaf with lots of seeds. Or go simple and slather on crumpets.
