Lemon skin and flesh have been macerated together and sweetened slightly to create this incredible lemon puree. The flecks of skin and pith throughout the puree create a desirable textural experience - the creamy, tart sweetness of lemon pith balanced with the very savoury and slightly bitter flavour of the peel. This is incredible in many desserts, but also could be the base of luscious cocktails or other chilled drinks.
