Parisian Essence – A Little Culinary Magic

Despite its rather glamorous name, Parisian Essence isn't a perfume, a liqueur or something you need a French accent to pronounce. It's actually a clever little kitchen secret that's been around for generations.

Also known as browning essence, this concentrated caramel colouring is used to give gravies, sauces, soups, rich fruit cakes and traditional Christmas puddings that beautiful, deep mahogany colour.

It's particularly useful when you want the appearance of hours of slow cooking without actually spending hours at the stove. A few drops can transform a pale gravy into something that looks considerably more accomplished.

How to use it: Add a little at a time, stirring until you achieve your desired colour. Remember, Parisian Essence is primarily about appearance rather than flavour — it won't replace the richness of a good stock or properly browned ingredients.

Our Pantry Tip: Keep a bottle tucked away for Christmas baking, traditional puddings and those occasions when your gravy needs a little help looking its Sunday best.

Because sometimes, appearances do matter. Especially when gravy is involved.
