Sourced by renowned Sardinian-born Hatted chef Giovanni Pilu, this Bottarga has was awarded 'Outstanding Artisan Produce' by the DELICIOUS Produce Awards. High praise indeed. For those not in the know, this Bottarga is made of air dried fish roe sourced from mullet in the waters off far north NSW. A traditional Sardinian delicacy, it's grated or thinly sliced over pasta, seafood or even salads to add an incredible umami hit and the flavour of the sea.
