What is verjuice?

Verjuice (or verjus, from the French vert jus, meaning “green juice”) is the juice of unripe, unfermented grapes. Unlike vinegar, which is produced through fermentation, verjuice retains the fresh, fruity character of the grapes while offering a bright, gentle acidity.

How to use it

Famously, verjuice is used for deglazing the fond left in a roast chicken pan, providing a lovely, gentle acidity for your pan sauce. It is also perfect anywhere you would reach for a subtle acidic addition. Think poaching fruit, marinades, dressings, and even cocktails.
