Akudjura, or Ground Bush Tomato, is a member of the nightshade family and endemic to Australia. The fruit is commonly pale tan to dark brown and in this case has been dried and ground to a powder. Akudjura has a fruity, caramel flavour with hints of citrusy brightness. The powder blends well with wattleseed and coriander root in flavouring meats and fish, and can also be used in soups or stews to add complexity and depth.
