Prickly Box Honey is one of Wellington Apiary's most distinctive single-floral honeys, harvested from the nectar of the Prickly Box flower, a native Australian shrub that flowers during summer. Wellington Apiary sources this honey from Tasmania's Coal River Valley, where flowering is highly dependent on seasonal rainfall. This honey is produced in limited quantities and is truly seasonal.

To showcase Tasmania's unique floral landscapes, the honey is raw, cold-extracted, unheated and coarse-filtered, preserving the natural pollen, aromas and flavours of each floral variety. The hives are not treated with chemical pesticides, taking advantage of Tasmania's freedom from major bee pests such as the Varroa mite.

This honey is rich with nutty flavours, less sweet on the palate than many other honeys, and has a very clean finish.
