A shrub, while being a bushy plant, is also a non-alcoholic syrup made of concentrated fruit juice, cider vinegar and aromatics. Served in cold sparkling water, it could be thought of as a more mature cordial. 

This shrub is the perfect accompaniment for agave spirits; mango smooths the smokiness of mezcal, and lime brightens the piquant flavour of tequila. Add a dash to a shot, or use in a margarita. The shrub stands alone without alcohol too - pair with ice, agave syrup and soda water in a salt-rimmed glass for a delicious margarita mocktail.
