Rich, meaty and buttery, the shiitake mushroom is an incredibly versatile fungi. Once only used in various Asian cuisines this mushroom has now become a globe trotter - as present in a Risotto as a steaming bowl of Ramen. Although these are dried, they've not lost their meaty flavour and are as excellent additions to braises, broths, and soups as they are to sauces and stir-frys.
