The Hunter's Pantry Cinnamon (Cinnamomum verum), also called Ceylon cinnamon.  Cinnamon comes from a busy evergreen tree of the laurel family and the spice is part of the dried inner bark.  It is delicately fragrant with a warm sweet unforgettable flavour. 

It is used in a wide variety of cuisines, in sweet and savoury dishes, anything from Indian curries to sugared donuts.  It is used whole as an infusion and ground for a more intense flavour.
