The leaves of the strawberry gum taste as they sound -  a mild eucalyptus flavour with the sweet aroma of strawberry. As they have a subtle flavour, the leaves pair well with cream based deserts such as crème brulée, panna cotta, and ice-cream, while complimenting white chocolate and vanilla well. 

The leaves can also be steeped to make a fragrant tea packed to the brim with antioxidants, and anti-fungal, and antibacterial properties.
