Description
Dukkah (also spelt as Duqqa) is a delicious nut, seed and spice mix originally hailing from Egypt. The name comes from the Arabic verb 'to pound', which speaks to original methods of grinding in a motar and pestle. It's said that there are as many blends and versions of Dukkah as there are Egyptian people - it's a highly customizable spice mix that varies from cook to cook, but commonly this crunchy, warm spice mix consists of sesame seeds, nuts (peanuts, almonds or pistachios are common), spices like cumin, cayanne, corriander, fennel seeds, and salt. This particular version from Riki Kaspi is incredible as a rub on meats to be roasted or grilled, as a crunchy element in salads, but it's also fantastic on warm (fresh is best!) pita with some olive oil as a snack.
