This crisping tool from Avanti will change the way you cook pork belly. Essentially, the device is held above the skin of the pork belly, and the 20 stainless steel blades are pushed down into the skin, rupturing the skin/fat layer which allows fat to escape and crisp the skin. Do this all over the belly, and you’ll end up with an impossibly crispy skin.
The tool is also great for improving the texture of tougher meats - breaking down connective tissues, and allowing marinades to flavour deeper within the meat. Use on beef, chicken, or fish to speed up the marinating process.
