Description
This Anzuboshi is a twist on the classic Japanese side, 'Umeboshi', which are salted plums. Due to the scarcity of Japanese plums in Australia, KaoKao decided to use apricots, which have a close texture and flavour to their Japanese counterparts. Use as a side in a 'Kaiseki' style meal, or simply over rice, or to add salty sweetness to a marinade.
About KaoKao:
Kaokao is an artisan producer of Japanese and Korean condiments based in Daylesford, Victoria. The Miso pastes are made in small batches from from Australian soybeans that have been fermented using traditional Japanese techniques
