Laguiole is the name of a small town in the south of France that is renowned for its beef, cheese and artisan knife craftsmanship. Cutlery made in this town was named after it, so we have the Laguiole name.
Jean Neron originally started crafting their knives in Laguiole three generations ago, but like many other knife manufacturers, moved 200km north to Thiers at the end of WW1. As the cutlery is still in the original style, it continues to be labled as Laguiole.
