Native Bush Tomatoes ('Desert Raisins') are a member of the nightshade family and endemic to Australia. Known as 'Akudijura' when ground to a powder, the fruit is commonly pale tan to dark brown and has a fruity, caramel flavour with some citrusy brightness. Bush Tomatoes blend well with wattleseed and coriander root in flavouring meats and fish, and can also be used in soups or stews to add complexity and depth.
