Milagai Podi, also known as 'Gunpowder Spice' is a hot, fragrant, chilli forward spice blend originating in Southern Indian cuisine. Commonly, 'gunpowder spice' is a blend of roasted dal, chillies, and spices. Herbie's blend contains Kashmiri chilli powder, ground coriander seeds, besan (chickpea flour), ground ginger, black pepper, sea salt, amchur (green mango powder), and dagar phool (black stone flower). Gunpowder spice is tempered in ghee or oil (to create Tadak or Chhonk) and poured over cooked dishes to produce an additional level of flavour.
