This 3 stage ceramic sharpener is ideal for both maintaining knives throughout their use and bringing knives back from the blunt graveyard. With 3 levels of sharpening (coarse, medium and super fine), simply cover the wheels in water so they don’t overheat and remain clean, and pull the knife through the ceramic wheel. Although the sharpener is designed with Global knives in mind, the angle is set to 15 degrees which is ideal for any Japanese style knife. The rubber base keeps the sharpener where you want it to be, and the ceramic wheels are replaceable (as they will eventually wear out over time).
