Akagi's Udon noodles are finer than regular Udon noodles, and they'e also flat -resulting in a different eating experience. They're still chewy and firm, but the thinner noodle has less surface area which means less chance to soak up liquid. This is a common feature of dried Udon noodles - it's not a bad thing, it's just worth thinking about!
