Kimchi is a delicious traditional Korean side dish made from lacto-fermented vegetables, often cabbage or radish and spring onions, flavoured with Gochugaru (Korean chilli flakes), garlic, fish sauce and salt. There are as many variations of Kimchi as there are grains of sand on the beach - it's highly customisable and can be easily adjusted for flavour preferences. Generally, it's spicy, it's funky, it's tangy and a fantastic side for grilled meats or just about anything else.
