Harissa is a fragrant, spicy chilli paste originally native to North African cuisines. This harissa paste gets a makeover, with apricots and Ras el hanout (a delicious Moroccan spice blend) to create a slightly sweet, spicy, scented sauce that is equally home in marinating lamb, beef or chicken as it is mixed through yogurt, or simply used on its own as a condiment.
