Reduced with sugar until it's sweet and slightly sticky, Tar 10's Caramelised Balsamic is certainly a flavour bomb. The funk of the balsamic vinegar is tamed by the sweetness of the sugar and creates a condiment that can be a delicious (and easy) salad dressing - but it's also wonderful when drizzled over a strong or salty cheese.
