The sugar gum (or Eucalyptus cladocalyx) is native to a few areas of South Australia, one being Kangaroo Island. This hardy gum blossoms in summer with small, creamy-white-yellow flowers. Together with the hardworking Ligurian Bees, these flowers create a delicious light honey with clean flavours of sugar cane, glass toffees and condensed milk. Mild, but sweet and satisfying, this is the perfect all-rounder honey. 

Kangaroo Island is the oldest bee sanctuary in the world. Let that one sink in. It's also home to the purest strain of the Ligurian Bee, which by all accounts are well-tempered, gentle and have high honey production. They were brought to the island from Italy in 1881, which even to this day is covered in national parks and conservation areas, making it one of the cleanest and unpolluted areas of the world. Good for the bees, good for the honey!
