Pink gum is an endangered species endemic to South Australia, and it flowers with delicate white petals from March to November. Perfect in warm or chilled drinks, on toast or as an accompaniment to a cheeseboard. 

Kangaroo Island is the oldest bee sanctuary in the world. Let that one sink in. It's also home to the purest strain of the Ligurian Bee, which by all accounts are well-tempered, gentle and have high honey production. They were brought to the island from Italy in 1881, which even to this day is covered in national parks and conservation areas, making it one of the cleanest and unpolluted areas of the world. Good for the bees, good for the honey!
