Berbere is a spice blend at the heart of Ethiopian and Eritrean cuisine. Like any blend the world over, each mix is slightly different, but is commonly used to flavour meat and vegetable stews and soups such as Dor Wat.

Berbere also makes for a fantastic rub on meats - the complex citrus flavours followed by a kick of chilli make for a delicious crust. This particularly blend contains sea salt, cumin seed, coriander seed, black peppercorns, ajowan seed, fenugreek seed, allspice, ginger, chilli, nutmeg, cloves and is about 2/10 in terms of heat level.
