Valrhona refer to their Couverture chocolates as "Fèves". Fèves is French for "Bean" and refers to the shape of the 'chocolate drop'.  

Itakuja is one of Valrhona's first chocolates to have emerged from the double fermentation technique. Once the initial cocoa fermentation is completed, a second fermentation occurs by adding locally harvested fruit - in this case, passionfruit. The result is a fruity, funky chocolate with passionfruit notes rounded off by Brazilian cocoa. The name is a conjunction of the town local to the plantations, Itacare and Mara Kuja, meaning "passionfruit" in the Indigenous Tupi langauge.
