Second only to saffron, Tahitian Vanilla is the worlds second most valuable spice. Let that sink in for a moment. More delicately flavoured, fruity and floral, than many other types of Vanilla, Tahitian Vanilla has a delicious aroma and is perfect for flavouring pastry creams, baked goods and ice creams, but it's also delicious added into savoury dishes too.

Vanilla originated in Mexico, and the Totonacs of Veracruz, or the Indigenous peoples that cared for it for centuries thought it was the food of the gods. It was brought to Europe in the 1500's and eventually to French Polynesia, and Tahitian Vanilla is actually a hybrid of two more commonly grown species, giving it a flavour profile of its own. As the bees needed to pollinate the flowers aren't native to the islands, each flower is pollinated by hand, adding to the luxury of the spice.
