Delve deeper into knives in our Knife Handling Class No 2.

In this class, we will examine the roll of filleting and boning knives. You will learn how to choose your boning and filleting knives, the differences between types, and how to sharpen and maintain them at home.

You will learn to tunnel bone, stuff and truss and then will move onto dicing, brunoise, mincing and chiffonade.

You will learn to make and cook a chicken Galantine with a warm Fregola Al Pomodoro.

If you are someone who tends to get the butcher to do the work, this class is for you!

We recommend you bring your own BONING KNIFE into this class—wrapped in a clean tea towel—so you get to know your knife. Knives will be available to those who’d prefer to use ours.
