Cock Palm sugar is made from nectar taken from the flowers of coconut and palm trees.  It is used in sweet and savoury preparations in South-East Asia, and gives a caramel like flavour that is unlike other refined sugar. 

The hard disk is best shaved or chopped - or simply melt into a small amount of water to make a liquid product and keep it in the refrigerator.  Stunning in a cocktail or as a sweetener in a cold-brew coffee.
