Citrus, Spice & Everything Nice: Exploring Native Flavours and the Best of Australia

Summer is the perfect season to celebrate Australia's unique flavours. In this post, we’re showcasing a selection of pantry gems that bring freshness, depth, and character to your cooking. From the zesty pop of finger limes, to the subtle spice of mountain pepper and the nutty warmth of wattle seed, the freshness of  lemon myrtle to the intoxicating delight of strawberry gum, these native and local ingredients transform everyday meals into something special. Whether you’re hosting a long summer lunch, crafting a cheeseboard, or experimenting in the kitchen, these flavours of place are sure to inspire.

Australian Finger Limes – Citrus Caviar

Tiny but mighty, finger limes are often called “citrus caviar” for their pearl-like burst of tangy, refreshing flavour. They’re perfect for adding visual impact and taste.

Traditionally, the fruit was used as an incredible source of Vitamin C, folate and potassium and as a topical application for sores and boils.

Serving Ideas:

  • Citrus Caviar: Sprinkle over oysters, prawns, or ceviche or fresh fish for a burst of tangy freshness.
  • Dessert Pop: Better than candy add to pavlova, panna cotta, or fresh fruit salad for a zesty twist.
  • Cocktail Garnish: Drop a few pearls into sparkling water, gin & tonic, or a summery mocktail, or gently rim a glass of mojito…

Mountain Pepper – A Subtle Spice

Native to Australia, mountain pepper adds a fragrant, peppery note to both savoury and sweet dishes. Its unique aroma and mild heat make it a versatile pantry staple.

Mountain Pepperberry is also known as Tasmanian Pepper, native pepper or bush pepper and traditionally used for both its antiseptic properties and its flavour.  The fruit or berries would be used as a poultice for a toothache.  It is also considered a superfood due to its high antioxidant content.

Serving Ideas:

  • Subtle Spice: Crush over grilled meats, especially beef or kangaroo, fish, or roasted vegetables, to add depth.
  • Pantry Twist: Stir into sauces, soups, or salad dressings for a distinctive aromatic kick.
  • Everyday hero: Replace your black pepper with mountain pepper in your mill and enjoy the versatility – but be warned – it’s sneaky and builds up an earthy, herbal spicy flavour!

Wattle Seed – Nutty & Aromatic

Wattle seed is a versatile native ingredient with a warm, nutty, coffee-like flavour. It’s perfect for adding character to baked goods and desserts.

Iconically Australian, wattle seed has been used by Indigenous Australians as a source of protein and carbohydrate in times of drought, where the seeds were ground and baked.

Serving Ideas:

  • Nutty Depth: Grind into flour for scones, biscuits, or pancakes.
  • Savoury & Sweet: Sprinkle over roasted nuts, salads, or chocolate desserts (ESPECIALLY WHITE CHOCOLATE) for a uniquely Australian flavour.

Strawberry Gum – Floral & Fruity

Strawberry gum is a rare native Australian ingredient with delicate, sweet, and slightly fruity notes. Its naturally pink-hued powder or dried leaves can add both flavour and a touch of colour to sweet or savoury dishes.

Due to its scarcity, the traditional uses of Strawberry gum are not well documented; it is likely used to make tea or refreshments.  In time, we will learn about the medicinal properties of the strawberry gum.

Serving Ideas:

  • Dessert Twist: Sprinkle into cakes, meringues, panna cotta, or ice cream for a subtle floral note.
  • Savoury Flair: Add to roasted vegetables, marinades, or sauces for a hint of natural sweetness.
  • Beverage Boost: Infuse into syrups, cordials, or teas for a gentle, fragrant flavour.
  • Gin:  Start your own brew – add some fresh leaves and develop some fabulous floral, fruity flavours

 

Lemon Myrtle – Bright & Citrus-Forward

Lemon myrtle is a fragrant native herb with a fresh, zesty lemon flavour and a subtle hint of floral sweetness. Perfect for both sweet and savoury dishes, it’s a pantry staple for adding a vibrant, distinctly Australian note.

Lemon Myrtle was traditionally used to flavour food wrapped in paperbark, to treat headaches by crushing and inhaling, and as an insect repellent.

Serving Ideas:

  • Citrus Boost: Stir into salad dressings, marinades, or sauces for a fresh, summery zing.
